Reviews
A famous rich-tonkotsu shop, relocated and reopened from Kamishinjo. The signature "Hon-Hakata" (¥1,000) uses a twice-boiled yobimodoshi broth — "almost no funk, yet dense, with a clean finish" is the verdict. Low-hydration ultra-thin straight noodles, rolled pork belly chashu, nori and negi: a classic build. The karaage, revived with the move, is crisp outside and juicy inside, and regulars pair it with the ramen. Follow the posted instructions for the queue.
