Whole chicken and chicken bones simmered for 8 hours for a deep broth, with tuna flakes for a seafood note and naturally brewed soy sauce aged in wooden barrels — a crisp shoyu ramen.

Founded in 1996 in Umeda, Osaka, this ramen-and-gyoza specialist is known for its tonkotsu ramen and the famous 'omu-chahan' (omelette fried rice); the Umeda main shop is open 24 hours Monday to Saturday. There is also a branch by JR Senrioka Station, about 3 km from Expo '70 Park.

Reviews of the Umeda main shop (on a travel site) praise the tender pork of the 'toro-niku' ramen and the omelette fried rice. The main shop is known for tonkotsu; this whole-chicken shoyu is a lighter, separate style.

Eating tips
A light chicken broth, but the official allergen listing also includes pork, milk and egg. Light does not mean cool — mind the heat.
