Ramen EXPO 2026 — Session 1 Quick Map

The signs at the venue are in Japanese only. This page is built so you can decide which of the 10 bowls to eat before you queue.

A one-page comparison of the 10 bowls in Session 1 (21–23 November): soup, richness, noodles, the meat and seafood in the official allergen listing, and spiciness. All 10 bowls list pork in the official allergens. Two list shrimp, one lists crab, one lists beef, and one is spicy.

If you have dietary restrictions (Session 1)

Re-sorted from the official allergen listing for the main menu. Not listed does not mean not used. Stalls share equipment and staff, so trace contamination cannot be ruled out. Confirm at the stall.

🐷 Pork: listed for all 10 bowls. If you avoid pork, there is no pork-free bowl in Session 1.

Eating tips by shop

Short notes for first-timers and visitors from abroad.
Kobe Tonkotsu Ramen Men-Sakaba Daichan
Thin noodles soak up broth fast — take your photo quickly and start eating right away. Both broth and toppings are pork.
Menya Ichigendo
As the name says, this is made to be 'salty-savoury' — the soy sauce is bold. Take note if you prefer mild flavours.
Niboshi Ramen Anchovy
Three whole shrimp come head-on and in the shell — peel and eat just the meat if the shell is hard. Shrimp is in the official allergen listing, so avoid this bowl if you have a shellfish allergy.
Teuchi Ramen Taniya
The thick miso broth splashes easily — careful when slurping. Come hungry: there is a lot of meat.
DURA麺TE (Duramente)
It is a chicken broth, but the official allergen listing also includes pork, milk and egg — this is not a pork-free bowl. Please note if you avoid pork for religious or other reasons.
Ramen & Gyoza Mannen
A light chicken broth, but the official allergen listing also includes pork, milk and egg. Light does not mean cool — mind the heat.
Men FACTORY JAWS
A light, clear salt broth — the fun is comparing the three kinds of chashu. Official allergens: wheat, mackerel, pork.
Menya Joobachi (Queen Bee)
Expect heat and strong spices — skip it if you don't like spicy food. The white bits floating in the broth are pork back fat. Stir the meat miso and spices in well before you start.
Tsukemen Ramen Kyogoku
The broth is chicken and vegetables, but the official allergen listing also includes pork, shrimp, crab, milk, egg and gelatin — it is not a chicken-only bowl. Check at the stall if you have restrictions.
Kitakata Shokudo
Miso from Aso in Kyushu is gently sweet rather than sharp (the official blurb also says 'slightly sweet'). The official allergen listing also includes beef, egg and gelatin.

FAQ

Is there a pork-free bowl?

No. All 10 bowls in Session 1 list pork in the official allergen listing — including the chicken paitan and chicken shoyu bowls, where pork appears in toppings or seasonings.

I have a shrimp or crab allergy.

Shrimp is listed for Anchovy and Kyogoku; crab is listed for Kyogoku. The other 8 bowls do not list them, but stalls share equipment, so check at the stall.

Which bowls are not spicy?

Only Joobachi's bowl is spicy. The other nine are not sold on heat.
