The bowl

From the shop (official announcement)
A pork broth that draws out every bit of the pork's flavour, sharpened with a crisp soy sauce, topped generously with 'toro-buta' — pork simmered until it falls apart with chopsticks.

Allergens (official listing)
Japan's 8 mandatory and 20 recommended allergen items used in the main menu. Stalls share cooking equipment and staff, so trace contamination cannot be ruled out — ask the staff at the stall if you have an allergy.
Good for:For anyone who wants to try a clear pork-and-soy broth instead of the usual cloudy tonkotsu.
About the shop
A shop from Okayama that also exhibited at Ramen EXPO 2025 as 'Ichigendo'. Its EXPO bowl is a Chinese-style soba with a pork broth sharpened by soy sauce and topped with fall-apart 'toro-buta' pork. We have not been able to confirm the home shop's location from official sources, so it is not listed.

Reviews and eating tips
What people say
A tasting report on an Okayama food site praises the sharp soy-sauce flavour, chewy medium-thick noodles and pork so tender it falls apart — a bold seasoning that goes well with rice.
Eating tips
As the name says, this is made to be 'salty-savoury' — the soy sauce is bold. Take note if you prefer mild flavours.
